Extra Brut Classic Method Champagne, produced by Barons de Rothschild. 100% Chardonnay. 0.75L bottle, 2012 vintage. A Blanc de Blancs that celebrates the excellence of Champagne, with a fresh, chalky minerality that blends with the richness of the 2012 vintage. Single-plot vinification in small 20hl stainless steel vats, with a small percentage in barriques. Aged for a minimum of 8 years on the lees. Beautiful, bright, pale gold hue with crystalline reflections. The fullness and richness of this sunny vintage are complemented by a fresh, chalky minerality. Notes of white-fleshed fruit and candied lemon are followed by aromas of toasted and dried fruit, such as apricots and grilled almonds. The ample, fresh, and vertical entry on the palate reveals great complexity. Notes of citrus and lemon zest support a long finish of toasted mocha and vanilla notes, creating a perfect combination of freshness and character.
