How it is produced
Production begins in the second half of September with manual harvesting and careful selection of the bunches. Fermentation takes place in stainless steel tanks at controlled temperature for fifteen days, using gentle extraction methods to preserve aromatic integrity. The maturation phase continues for sixteen months, divided equally between small and large wooden barrels, encouraging the perfect evolution of the wine. A final bottle ageing of ten months defines its natural elegance and complexity.
