| Story | Cartology means the study of maps or charts. It could not be a more perfect name for this wine. Not only because of our efforts to search and find these special old vineyards, but also because the wine itself can be seen as a wine map or tapestry of the Cape. |
| Wine making | The grapes are hand-selected and whole cluster pressed. The juice is very light with no additions to the raw juice, wild fermentation in concrete, clay pots, foudres, or old barrels (various sizes). Fermentation can last from 3 weeks to 11 months. |
| Aging | 12 months, then rests on fine lees without ageing for a further 6 months before bottling. Very simple and careful vinification. |
