How it is produced
Production begins in mid-October with a manual harvest and a rigorous selection of the grapes. Vinification involves alcoholic fermentation accompanied by a thirty-day maceration on the skins in steel tanks. After racking, the wine matures in large Slavonian oak barrels for thirty months. This lengthy ageing process stabilises the aromas and gives great balance, making it ideal for accompanying structured dishes such as braised meats, roast veal, game and mature cheeses.
