Harvest By hand, with small crates. Grapes are dried for about 3-4 months in dry, well-ventilated rooms.
Vinification When they reach the ideal degree of drying, they are pressed and fermented in temperature-controlled steel tanks. Once fermentation has started, it continues for about 30 days to allow the full development of the high alcohol content of the wine.
Ageing After an initial maturation in concrete - to allow malolactic fermentation to take place - ageing begins in medium and large oak casks for about 30 months. After bottling, the wine rests for at least 3 months in the bottle.
