Harvest |
By hand, with small crates. Grapes are dried for about 3-4 months in dry, well-ventilated rooms. |
Vinification |
When they reach the ideal degree of drying, they are pressed and fermented in temperature-controlled steel tanks. Once fermentation has started, it continues for about 30 days to allow the full development of the high alcohol content of the wine. |
Ageing |
After an initial maturation in concrete - to allow malolactic fermentation to take place - ageing begins in medium and large oak casks for about 30 months. After bottling, the wine rests for at least 3 months in the bottle. |
