After harvesting, the grapes are dried for at least 4 months, resulting in a weight loss of at least 40%. Fermentation temperature between 18-22°C. Length of maceration: 30 days. |
Ageing |
Maturation in wood for 24 months. Bottle ageing for 6 months. |
Pairing |
It pairs well with well-structured dishes based on long-cooked meats. Moreover, it is extraordinary with game, and does not disdain to be tasted at the end of a meal as a wine to be enjoyed by itself. Finally, it can be left in the cellar to be tasted at a more evolved stage. |
