Production technique |
The drying process occurs naturally for 3-4 months in the drying loft. The grapes lose 40% of their original weight. |
Vinification |
Soft pressing of the loose berries is carried out in the first fortnight of January. Fermentation: Destemming followed by soft crushing of the grapes. The fermentation lasts 22/24 days with daily pump-overs. |
Ageing |
5 months in stainless steel, then in wood for 15 months (half in Slavonian oak casks, half in second-passage barriques). The wine finally ages 6 months in the bottle. |
Pairing |
It pairs well with braised meats, game in general and hare in particular, duck in orange sauce and long-aged cheeses. Moreover, it pairs well with lobster. Finally, it is a great wine to be enjoyed by itself. |
