Amarone is very important within the Italian wine panorama, exclusive and incomparable symbol of Valpolicella area. The „Riserva“ is subjected to a longer aging in Barrique: 48 months.

Vendanges	At the end of September with man- ual harvest, and the grapes are collected into plateau. The grapes are put into wooden plateau of approximately 7 Kg and then placed in a storeroom for drying where the grape loos- es at least 40% of its initial weight due to evap - oration.
Vinification	At the end of January crushing of the grapes without de- stalking: Maceration time: 35/40 days, with hand pressing. Fermen- tation to controlled temperature.
Affinage	Minimum 48 months in French oak bar - rels of 2.25 hl and 5 hl tonneaux and another 6 months in bottle.
Allergènes	Contient des sulfites
À déguster avec	Excellent when served with wild game, spit, meat, roasts and aging cheeses.
