Chronicon Pecorino by Zaccagnini is a still white wine from the Abruzzo denomination. Where it comes from
The grapes ripen on the hills of Bolognano, in the Casauria Valley, in the province of Pescara. In this part of Abruzzo, the strong temperature variations between day and night encourage the development of very distinct floral and fruity aromas. The vineyards benefit from a western exposure and grow on medium-textured clay soils, cultivated using pergola and espalier systems. The name Chronicon is a tribute to the Abbey of San Clemente a Casauria and its famous medieval chronicle, highlighting the deep connection between Abruzzo viticulture and the historical roots of its territory.
How it is produced
The harvest takes place in August. To preserve the integrity of the Pecorino, the grapes undergo pressing in the absence of oxygen, followed by cold settling of the must for seven days. Fermentation takes place in stainless steel tanks at a controlled temperature for ten days, ensuring extreme aromatic precision. Ageing on fine lees for about three months gives the wine structure without the use of barrels, keeping the freshness of the fruit intact. The result is a crisp and versatile white, perfect for accompanying shellfish dishes, clams, fish and grilled white meats.
