Description
This Champagne Dosage Zero, the fruit of the labors of the Vincent Couche cellars, is an AOC Champagne Brut. It is a biodynamic white sparkling wine, made with the classic pas dosé method, and is produced in France, in the Champagne region. The history of this wine is very ancient and intertwined with legend: its tradition dates back three hundred years. It is said to have been invented by the Benedictine abbot Dom Pierre Pérignon, but there are different versions regarding its origins; over time, the evolution of Champagne has meant that today it is preferred not to add sugar, as was done in the past. Hence the Champagne Dosage Zero, which does not require the addition of sugar, in order to preserve its authentic and "naked" flavor. The Champagne Dosage Zero Vincent Couche is the result of a blend that combines Chardonnay grapes (33%) and Pinot Noir grapes (67%). Some of the Chardonnay grapes are grown near Montgueux, characterized by chalky soil; the Pinot Noir grapes, however, are found in Buxeil. Both vineyards are cultivated strictly biodynamic and the harvest takes place in early September, using only ripe and healthy grapes. Finally, the winemaking process follows the classic method or champenoise method with a second fermentation in the bottle for 8 years.
