How it is produced
Vinification begins with a gentle pressing to extract the must, followed by a brief maceration on the skins to define the fresh aromas. Fermentation takes place at a controlled temperature between 16 and 19°C, supported by post-fermentation clarification aimed at stabilising the aromatic profile. Ageing occurs in temperature-controlled tanks for a period ranging from two to six months, preserving the expression of Pinot Grigio and its structural lightness. Its freshness makes it ideal for pairing with lean fish, seafood starters, white meats and poultry.
