Vigneti Romio Rubicone Pinot Grigio is a still white wine that is vegan, made exclusively from Pinot Grigio grapes. This wine from Vigneti Romio displays a pale straw yellow colour with delicate greenish highlights. Its aromatic profile offers fresh scents of white flowers, accompanied by notes of crisp fruit such as green apple and pear, with a subtle citrus touch. On the palate, it is light and refreshing, characterised by a soft and persistent finish that ends with a pronounced mineral note in every sip.

Where it comes from

The grapes are grown in the Emilia-Romagna region, within the historic Rubicone area. The vineyards stretch across a landscape alternating between hills and plains, an ideal environment to enhance the smoothness and savouriness of the grape variety. The vines are cultivated using Guyot and double-arched cane training systems, with a planting density of 5,500 vines per hectare. The grapes are harvested at the end of August, ensuring optimal ripeness that preserves an excellent balanced acidity, essential for the wine’s fragrance.

How it is produced

Vinification begins with a gentle pressing to extract the must, followed by a brief maceration on the skins to define the fresh aromas. Fermentation takes place at a controlled temperature between 16 and 19°C, supported by post-fermentation clarification aimed at stabilising the aromatic profile. Ageing occurs in temperature-controlled tanks for a period ranging from two to six months, preserving the expression of Pinot Grigio and its structural lightness. Its freshness makes it ideal for pairing with lean fish, seafood starters, white meats and poultry.
