How it is produced
Production begins with the selection of perfectly ripe Pinot Noir grapes. After pressing, a skin maceration of about three hours extracts the delicate rosé colour. Primary fermentation takes place in temperature-controlled steel tanks for seven months, ensuring the purity of the base wine. The secondary fermentation follows the principles of the Traditional Method, followed by ageing on the lees for at least twenty-four months. This extended maturation enriches the structure and gives the Brut its distinctive fullness.
