Produced using the Charmat Method, it stands out for its intense straw yellow colour, soft mousse and refined bouquet with citrus and floral notes. On the palate, it offers a balanced and aromatic sip with a velvety texture, and a harmonious finish, making it an elegant aperitif.
Where it comes from
The grapes are grown in the vineyards of Fiumicello, located on the Cortona estates in Friuli-Venezia Giulia. In this area, which lies on the ancient bed of the Torre stream, the gravelly and sandy soils provide an ideal habitat for the vine. The unique geology gives the wine a pronounced territorial character, ensuring a clear varietal expression of Ribolla Gialla. This close connection with the soil results in a clean style, able to precisely enhance the primary aromas of the grape variety.
How it is produced
Harvesting takes place in September and is followed by white vinification with gentle pressing of the grapes. After static decantation, the must ferments at a controlled temperature to preserve aromatic clarity. The sparkling process is achieved through a natural refermentation in autoclave, following the Charmat Method. This process ensures a fine perlage and defines the Extra Dry dosage. The entire process gives the wine a harmonious and structured profile, characterised by a long and orderly persistence.
