Vajra's Dolcetto d’Alba is an organic still red wine with a Denominazione di Origine Controllata (DOC) from Piedmont, which highlights the purity of the Dolcetto grape variety through vinification and ageing in steel. On the palate, it reveals a vibrant and harmonious texture, enriched by nuances of mountain flowers and light sweet spices. Where it comes from
This wine is born in Piedmont, on the western hills located between the municipalities of Barolo and Novello. The vines, grown at high altitude, benefit from a privileged exposure that favours the gradual ripening of the clusters. Agronomic management follows the principles of organic farming, promoting permanent grassing and protecting the biodiversity of the vineyards and surrounding woodlands. Thanks to the high altitudes and the age of the plants, the Dolcetto maintains extraordinary vivacity and aromatic precision, reflecting an authentic bond with the terroir.
How it is produced
The harvest takes place in the first half of September; the clusters undergo gentle vinification with regular punching down for about fifteen days. After racking, the wine undergoes spontaneous malolactic fermentation, followed by ageing carried out exclusively in stainless steel tanks. This choice is intended to preserve the brightness of the fruit and the original aromatic integrity. Bottling takes place the following spring, offering a fresh and fragrant red with a distinct gustatory cleanliness.
