What kind of wine it is
Torcicoda Primitivo by Tormaresca is an organic red wine that expresses the most authentic soul of Salento. Characterised by an intense ruby colour with violet reflections, it offers a complex bouquet of blackberry, black cherry, liquorice, coffee and vanilla. On the palate, it is rich and full-bodied, supported by a pleasant freshness and a persistent finish with hints of sweet spices. As it is unfiltered, the wine retains its maximum structural integrity, making it the ideal companion for roast meats and Apulian specialities.
Where it comes from
This wine is produced at the Maìme Estate in San Pietro Vernotico, from old Primitivo vineyards trained using the bush vine and cordon spur methods. During the first days of September, the selection and harvesting of the bunches in slight over-ripeness ensure an intense and enveloping aromatic profile. The name celebrates both the vigorous fertility of the vine, historically known for its generous productivity, and an ancient agricultural tool used for the care of horses, paying homage to the history and authenticity of the region.
How it is produced
Following a gentle pressing, the must macerates for about thirteen days in steel through pumping over and délestage. Fermentation is carried out at strictly controlled temperatures to gently extract colour and tannins. Subsequently, the mass undergoes malolactic fermentation and matures for ten months in French and Hungarian oak barrels, gaining elegant toasted nuances. A final rest of several months in the bottle allows the wine to achieve its perfect sensory harmony.

Through the cultivation of native grape varieties in harmony with the environment, the company contributes to the oenological renaissance of Southern Italy. The original name pays tribute to an ancient tool used for horse care and recalls the nature of the Primitivo vines, a grape so generous that it has historically been known as the one of the “three harvests”.
