Where it comes from
This wine is produced at the Masseria Maime estate in San Pietro Vernotico, in the heart of Salento. The Apulian region provides ideal conditions for viticulture thanks to its proximity to the sea and the beneficial Mediterranean climate. The vines take root in calcareous and clay soils, a combination that gives the grapes intense aromas and great vivacity on the palate. Tormaresca's approach aims to enhance native grape varieties to the fullest, truly expressing the most genuine essence of the Apulian terroir.
How it is produced
The production process begins with a meticulous manual harvest to select only the best bunches. In the winery, the Negroamaro grapes are destemmed and gently pressed. The must is cold-settled in stainless steel tanks to preserve the primary aromas. This is followed by low-temperature fermentation, which is essential for defining the wine's aromatic profile. The wine then matures in steel in contact with its lees and completes the cycle with a further period of rest, thus achieving perfect expressive and structural stability.
