Terre Nere Etna Rosso Guardiola is a still red wine that expresses the essence of Etna, in Sicily. This refined blend of Nerello Mascalese and Nerello Cappuccio grapes presents a pale ruby colour with orange highlights. The bouquet is deep, enriched by a balsamic note reminiscent of Mediterranean herbs. On the palate, it is balanced, supported by a firm yet pleasant acidic-tannic structure, ideal for long ageing. After proper decanting, it pairs perfectly with red meats, game, and mature cheeses.
Where it comes from
The cuvée originates in Contrada Guardiola in Castiglione di Sicilia, on the northern slope of the volcano at around 900 metres above sea level. The vines, cultivated organically in the traditional Etnean bush vine style, are old vineyards of sixty years. The roots delve into purely volcanic soil, composed of sand, pumice, ash, and abundant rocky fragments. These geological features give the wine a tense and defined profile, enhancing its minerality and ensuring an innate balance between freshness and structure.
How it is produced
The harvest takes place in mid-October, with limited yields to ensure the excellence of the fruit. The process begins with temperature-controlled fermentation, followed by spontaneous malolactic fermentation. Maturation lasts about eighteen months and takes place in French oak barrels, including a proportion of new wood. Before finishing, the wine rests for a month in steel, a useful step to stabilise its elegance and ensure an ageing potential that can exceed twenty-five years.
