What kind of wine it is
Etna Bianco Santo Spirito by Tenuta delle Terre Nere is an organic white wine produced on the northern slope of the volcano. Made from Carricante grapes, it displays a straw yellow colour with golden highlights. On the nose, it offers complex aromas, characterised by clear floral and spicy notes. On the palate, it stands out for its full structure, supported by a pronounced volcanic savouriness and a vibrant freshness, qualities that make it ideal for pairing with fish dishes, white meats and vegetarian recipes.
Where it comes from
This wine comes from the Santo Spirito vineyard, located in Castiglione di Sicilia at an altitude between 700 and 750 metres. The vines, cultivated using the classic alberello system, sink their roots into deep, dark soils, composed mainly of volcanic ash. This particular soil composition gives the wine a typical aromatic imprint and a distinct gustatory energy. The winery follows sustainable and certified practices, protecting the ecosystem to obtain healthy grapes that express the essence of the Sicilian territory.
How it is produced
Harvesting takes place in the first days of October. The grapes undergo a brief cold maceration, followed by gentle pressing and static decantation of the must. Alcoholic fermentation takes place in French oak barrels, where malolactic fermentation also occurs. The wine matures for ten months in the same barrels, then completes its journey with a further eight months of bottle ageing, which refines its breadth and balance.
