What kind of wine it is
Etna Bianco Cuvee delle Vigne Niche Calderara Sottana, Denomination of Controlled Origin from Tenuta delle Terre Nere, is produced on the slopes of the volcano from Carricante grapes. In the glass, it reveals a bright straw yellow colour, enhanced by elegant golden reflections. The aromatic profile opens with a floral and spicy bouquet, introducing a sip that blends lively freshness with pronounced savouriness. On the palate, it expresses itself with intensity and richness, distinguished by a silky texture and enveloping vanilla notes that lead to a long and persistent finish.
Where it comes from
The grapes come from the northern side of the volcano, specifically from the renowned Contrada Calderara in the municipality of Randazzo. The vineyards are cultivated using the traditional bush vine system at an altitude between 600 and 650 metres above sea level. The vines sink their roots into an extremely stony volcanic soil, shallow and rich in stones. These specific pedoclimatic conditions, combined with a low yield and harvesting in the first days of October, allow for bunches that give the wine its unmistakable savoury and essential character.
How it is produced
The vinification process involves gentle pressing, followed by a brief cold maceration at a controlled temperature and static decantation of the must. Alcoholic fermentation takes place in French oak barrels, where the wine also undergoes malolactic fermentation and rests for ten months. A further eight months of bottle ageing completes its evolution, giving it structure and elegance.
