What kind of wine it is
Carusu by Terrazze dell’Etna is an organic red wine that embodies the authentic character of Etna Rosso. This blend of Nerello Mascalese and Nerello Cappuccio displays an intense ruby hue, enhanced by subtle garnet reflections. On the nose, it reveals clear aromas of ripe red fruits, spicy notes and hints of lacquer. On the palate, a solid and harmonious structure emerges, refined in barrels, supported by rounded and gentle tannins leading to an ethereal finish, ideal with red meats and mature cheeses.
Where it comes from
The grapes are grown on the north-western slope of the volcano, in the Bocca d’Orzo area in the municipality of Randazzo. At six hundred metres above sea level, the thirty-year-old vineyards are cultivated using the espalier system and the Etnean Bush Vine method. The roots explore deep, dark volcanic-lava soils rich in rocky debris, formed from the disintegration of ancient lava flows. The cool, breezy climate ensures a strong temperature variation between day and night, giving these grapes a distinctly mountainous identity.
How it is produced
After harvesting in mid-October, vinification begins with a forty-day maceration on the skins, using pumping over and délestage to optimise structural extraction. At the end of the spontaneous malolactic fermentation, the wine initially matures in steel before continuing its evolution in barrels for ageing for a similar period. The final stage involves a twelve-month rest in the bottle, essential for softening the tannic texture and achieving perfect balance on the palate.

Ancient head-trained vines over 60 years old give life to Cirneco: Etna Rosso, whose name is a tribute to the volcano's native hunting dog, which possesses the wine's equal characteristics in terms of elegance and strength.
The younger vines give birth to Carusu, a young Etna Doc that retraces the history of Etna reds in a modern key, Rosato Etna Doc with its pinky hues, and Ciuri, an elegant and unique wine, originated from the white vinification of Nerello Mascalese.
From the Carricante vineyards comes Cinniri, a Bianco Etna DOC that, as the name indicates, brings the typical flavours of the volcano back into the glass.
The international grape varieties give rise to four Metodo Classico sparkling wines (two that remain 36 months on the lees and two that remain 50 months) and two IGT Sicilia red wines. Read more
