How it is produced
Vinification begins with manual harvesting and gentle whole-bunch pressing. After natural sedimentation, the must undergoes a slow fermentation at controlled temperature in steel tanks. Maturation continues for several months on the fine lees, divided between steel and large wooden barrels, a process that enriches the structure and creaminess of the wine. The different parcels are finally brought together for the final blending, resulting in an elegant, balanced glass with marked longevity.
