The Sumaré Extra Brut Rosé Sparkling Wine from Tenute Rubino is an authentic expression of the Susumaniello grape. Made strictly according to the Traditional Method, it appears in the glass with a captivating bright salmon pink colour, enlivened by a fine and persistent perlage. On the palate, it reveals a pronounced personality and a dynamic sip, characterised by sophisticated notes of candied ginger, hazelnut and an enveloping hint of salinity. This Extra Brut sparkling wine stands out for its fresh, precise and elegant structure, capable of expressing the winemaking vocation of the Brindisi area with every taste.
Where it comes from
The grapes are grown on the Jaddico-Giancòla estate, a picturesque stretch of Apulian coastline at sea level. The sandy and clay soils of this maritime area give the wine a marked savouriness and a taut flavour profile. The vineyard is trained using the spur-pruned cordon method, with a high planting density and low yield to ensure excellent aromatic concentration. The influence of the sea guarantees a dry and linear character, perfectly balanced by a pronounced freshness, which supports a balanced and continuous sip.
How it is produced
The harvest is carried out entirely by hand, carefully selecting the best Susumaniello bunches. The primary fermentation takes place in temperature-controlled stainless steel tanks, an ideal technique for preserving the original aromatic clarity of the grape variety. The subsequent prise de mousse follows the strict timing of the Traditional Method, with a patient ageing on the lees for at least twenty-four months, a crucial step in giving the wine its elegance and finesse. Served chilled, it offers a vibrant tasting experience, ideal for fully appreciating its savoury and persistent texture.

After all, winemaking is an ancient art here in Jaddico: over the years, archaeologists have brought to light a Roman manor house filled with kilns, where Visellio—the owner of the estate—fired the amphorae used to export his wine to the four corners of the Roman Empire. At the time, this land was home to extensive vineyards and served as an important manufacturing center for wine containers.
