Tenuta Ulisse Passerina is a still white wine made from Passerina grapes. On the nose, it offers intense aromas of peach, apricot and grapefruit, enriched by pleasant mineral notes. On the palate, the sip is fresh and lively, characterised by a pronounced acidity that balances the drink, finishing with a long mineral aftertaste. Thanks to these distinctive flavours, this white pairs perfectly with fish carpaccio, sushi, fresh shellfish and soft spun cheeses, enhancing every seafood dish with great precision.
Where it comes from
This wine originates from Crecchio, in the province of Chieti, a highly renowned area within the Terre d’Abruzzo denomination. The Passerina grape is a white variety historically linked to the Adriatic coast, belonging to the Trebbiano family and known for its small berries. In the Abruzzo microclimate, the vine shows a remarkable ability to accumulate sugars during ripening, while maintaining its acidic component intact until harvest. The Tenuta Ulisse winery enhances this ancient viticultural heritage to offer a true expression of the territory.
How it is produced
The production process begins with the selection of the grape bunches, which are cooled using a conditioning tunnel for rapid temperature reduction. This is followed by a cold skin cryomaceration, essential for delicately extracting aromatic compounds. After destemming and pressing in an inert environment, the must undergoes static clarification. The subsequent slow fermentation at a controlled temperature takes place at 11°C in steel tanks. The wine completes its cycle with a three-month maturation in stainless steel, followed by further bottle ageing to stabilise its organoleptic characteristics.
