How it is produced
The process begins with a cold maceration, followed by gentle pressing. Fermentation takes place in steel tanks to preserve the aromatic purity. The wine matures for twelve months on the lees in first and second passage French oak barrels, then rests in the bottle. This careful artisan method results in a harmonious, fresh white wine with a deeply mountainous soul.
