What kind of wine it is

Suavia Monte Carbonare is a still organic white that faithfully interprets the character of Garganega. Distinguished by a bright straw yellow colour, it reveals clear notes of broom, wildflowers and citrus hints on the nose, accompanied by subtle vegetal nuances. On the palate, it stands out for its vivid freshness and pronounced savouriness, balanced by a soft and velvety texture. In the mouth, it is sharp and harmonious, finishing with a distinctive smoky mineral note and a distinctly saline finish.

Where it comes from

Located in the heart of Veneto, the Suavia winery has been cultivating the lands of Fittà since the nineteenth century. In this exceptional terroir, the estate follows the principles of organic and sustainable agriculture, caring for historic vines that are up to sixty years old. Under the guidance of oenologist Valentina Tessari, the production clearly reflects the identity of Soave Classico, offering a deep and authentic expression of the territory, able to highlight the unique characteristics of its place of origin without filters.

How it is produced

After vinification, the wine matures for twelve months in stainless steel, an ideal choice to preserve its natural acidity and varietal purity, then refines for a further six months in the bottle. This approach enhances a structure that is clear, clean and elegant. Excellent served at a temperature between 10 and 12°C, it pairs perfectly with fish dishes and refined cheese boards, offering a sip of great balance and a very persistent finish.

The castle is the one in Soave: a heritage from the Middle Ages, when the town was still called by the old name of Suavia; Giovanni and Rosetta’s daughters, however, have been the main female characters in this story since the start of the twenty-first century.

Our family has been living and cultivating the land since the nineteenth century in Fittà: a small rural village mounted like a precious stone on the hills of Soave Classico. The history of Suavia however began later, in 1982, when Giovanni and Rosetta (the father and mother), aware of the great potential of their area, decided to set up on their own and make their mark, crushing their grapes and making their own wine.

Today we three sisters, Meri, Valentina and Alessandra, carry on the family tradition and run the winery always working here in Fittà, where it all started.
