Description
What kind of wine is it
Suavia Castellaro Soave Classico is an organic white wine from Veneto with a bright straw-yellow colour, made from Garganega grapes grown on historic vineyards. On the nose, it reveals clear aromas of jasmine and lemon zest, intertwined with subtle spicy notes of white pepper. The palate is marked by a crystalline freshness, a lively character and a savoury, persistent finish.
Where does it come from
The grapes ripen in Fittà di Soave, in the heart of the Soave Classico area. The vineyards are rooted in volcanic soil of medium depth, composed of weathered basalts rich in rocky fragments. This geological matrix translates into the glass as a pronounced minerality, giving the wine an energetic style deeply connected to its terroir.
How is it produced
The manual harvest precedes fermentation in stainless steel, carried out without malolactic fermentation. The wine gains roundness through ageing on fine lees for twelve months, followed by a period of rest and a single membrane filtration. At the table, its vibrant taste profile pairs ideally with delicate fish dishes, sushi and mature cheeses.
History and Curiosities
Produced in the heart of the Soave Classico, Castellaro embodies the dedication of the Tessari family, guardians of these hills since the 1800s. This elegant organic white wine is born from historic Garganega vines rooted in volcanic basalt soils. Under the guidance of oenologist Valentina Tessari, sustainable practices include meticulous ageing on fine lees for twelve months and a further two years of bottle maturation. The result is a taut, vibrant and energetic wine, awarded an exceptional score of 95 points by James Suckling for its refined minerality.

Our family has been living and cultivating the land since the nineteenth century in Fittà: a small rural village mounted like a precious stone on the hills of Soave Classico. The history of Suavia however began later, in 1982, when Giovanni and Rosetta (the father and mother), aware of the great potential of their area, decided to set up on their own and make their mark, crushing their grapes and making their own wine.
Today we three sisters, Meri, Valentina and Alessandra, carry on the family tradition and run the winery always working here in Fittà, where it all started. Read more
