Where does it come from

How is it produced
The production of Simonsig Cuvee Royale Blanc de Blancs follows the prestigious Traditional Method, known in South Africa as Cap Classique. After gentle whole-bunch pressing, the must undergoes fermentation in stainless steel, without malolactic fermentation to preserve the integrity of the citrus notes. This is followed by secondary fermentation in the bottle, with maturation on the lees for at least three years. This ageing process enriches the wine's structure, balancing the acidity with a delicate yeasty note and giving the sip remarkable depth.

These elements are intertwined in this family-owned farm, where the late Frans Malan produced the first bottle of our much-loved Kaapse Vonkel, South Africaʼs first Méthode Cap Classique made in the classic bottle-fermented style. He is also honoured for co-founding the thriving Stellenbosch Wine Route, a first in its time.
