Sella & Mosca Dimonios Cannonau di Sardegna Riserva is a still red wine that embodies the essence of the Sardinian territory, made from Cannonau grapes. Where it comes from
The grapes are grown in vineyards located between the Alghero area and the hills south of Monte Limbara, in Gallura. Here, the Cannonau vines sink their roots into warm, sandy soils, a pedoclimatic condition that gives the wine a full texture and a pronounced savoury component. The spur-pruned cordon training ensures low yields to encourage greater aromatic intensity. Harvesting takes place in mid-October, aiming for complete polyphenolic ripeness. This timing allows for the collection of bunches rich in substance, laying the foundation for a complex and deep aromatic profile.
How it is produced
Vinification begins with a cold pre-fermentation maceration, a technique aimed at delicately extracting colour and primary aromas. The subsequent fermentation at controlled temperature optimises the extraction of structure. The elegance of the sip is refined during a long maturation period: the wine rests for at least twelve months in large Slavonian oak barrels, a stage that smooths the tannic profile and imparts enveloping toasted notes. The process is completed with a careful final ageing, essential for harmonising all the sensory components and giving balance to the wine.
