Produced using the Traditional Method, it reveals a pale straw colour in the glass, animated by a dense and persistent perlage. On the nose, it is fresh, dominated by clear aromas of pear and white peach. The palate is inviting, combining notes of ripe fruit and citrus with a lively freshness. The dry finish, typical of Extra Brut, lingers on delicate liquorice and dried fruit notes. The low sugar dosage enhances the precise style of the sip, offering a dynamic profile ideal for accompanying starters, shellfish, and cheese selections.
Where it comes from
The Champagne by Savart originates in the communes of Écueil and Villers-aux-Noeuds, renowned villages classified as Premier Cru in the Marne. The rows of vines are sheltered by the Montagne de Reims and benefit from a climate that blends continental and oceanic influences, encouraging the development of high natural acidity in the grapes. The soul of this terroir lies in its deep chalky layer, known as craie. This particular geological composition acts as a valuable water reserve, retaining moisture to release it during dry periods and giving the wine its unmistakable mineral character.
How it is produced
Vineyard care is based on manual work and full respect for the ecosystem, following the physiological rhythms of the vines. After a rigorous hand harvest, in the cellar Savart creates a careful blend by combining the musts from the first and second pressings. Once malolactic fermentation is complete, the wine undergoes a period of ageing in steel tanks in contact with the fine lees, preserving the aromatic clarity of the fruit. The subsequent prise de mousse, typical of the Traditional Method, defines a taut and clean sip, an authentic and faithful expression of its place of origin.
