What type of wine it is
Champagne Premier Cru Les Noues by Frédéric Savart is a Blanc de Noirs with a sharp and precise personality, produced exclusively with Pinot Noir grapes. Made according to the Traditional Method, it presents a bright straw-yellow colour and a fine, persistent perlage. The aromatic profile combines elegant hints of red fruits with fragrant nuances of bread crust. On the palate, the choice of zero dosage delivers a dry, vibrant and mineral sip, which leads to a finish of great persistence and elegance.
Where it comes from
The grapes come from Écueil, a famous village in Champagne, and specifically from Premier Cru-classified plots such as Aillys, Chaillots derrière Moutier and Gillys. These historic old vines, managed with full respect for natural balance, grow on clay-limestone soil which gives the wine a vibrant tension. The territorial identity emerges in a sip characterised by a distinct mineral freshness and an aromatic purity that faithfully expresses the characteristics of the cru.
How it is produced
Vineyard management is entirely manual, with minimal intervention in the cellar to enhance the expression of the terroir. Ageing on the lees takes place for ten months in oak barrels, a choice that adds structure while preserving the natural freshness of the fruit. Second fermentation according to the Traditional Method gives life to a non-dosage Extra Brut cuvée. This artisanal approach results in a Champagne with a dry and taut profile, distinguished by a marked mineral imprint and excellent gustatory persistence.
