What kind of wine it is
Cala Silente is a still white wine produced by Santadi in Sardinia from Vermentino grapes, representing the Vermentino di Sardegna denomination. Vinified in steel and matured in cement on the lees, it is characterised by a dry and aromatically intense taste. It appears a straw yellow colour enriched with green-gold reflections, which anticipate aromas of apple, peach and citrus, combined with subtle hints of fennel. On the palate it is refined and balanced, with remarkable juiciness that leads the drink towards a long finish, slightly bitter and with delicate herbal notes. Its pronounced vitality makes it ideal for pairing with raw seafood, sushi and white meats enhanced by aromatic sauces.
Where it comes from
The grapes come from Sardinia, specifically from the Sulcis area, within the Vermentino di Sardegna zone. The vineyards are planted on sandy and clayey soils of medium texture, carefully chosen for their exposure and limited yield. The vegetative cycle benefits from a hot and arid climate during the summer, which becomes mild in the winter period. These unique environmental conditions allow the bunches to reach optimal ripeness, giving the wine an intense aromatic expression and a balanced structure.
How it is produced
Between September and early October, manual harvesting is carried out, followed by a rigorous selection of the bunches. Alcoholic fermentation takes place in steel tanks at a controlled temperature, thus preserving the integrity of the varietal aromas. Subsequently, the wine matures in cement vats, where it rests in contact with its own lees. This period on the fine lees is a fundamental stage of production, capable of softening the structural texture and giving the sip a pleasant roundness of flavour.
