Sanct Valentin Pinot Grigio from San Michele Appiano presents itself as a white wine with an intense straw-yellow colour. Where it comes from

The Pinot Grigio grapes grow in the vineyards of Appiano Monte, in the heart of South Tyrol. The local microclimate provides an ideal environment for viticulture, ensuring excellent aromatic concentration in the grapes. Vineyard work follows the principles of sustainable production, with full respect for the plant. This mountainous habitat gives the fruit a marked freshness, enhancing the wine's solid structure and guaranteeing a high ageing potential.

How it is produced

The winemaking process begins with a rigorous selection of the best bunches. Alcoholic fermentation and subsequent malolactic fermentation take place entirely in small oak barrels. The wine then undergoes eleven months of ageing on the lees in the same barrels. This careful process enriches its taste volume, enhancing the delicate fruity component and giving the sip a creamy consistency, framed by pleasant smoky and toasted notes.
