What kind of wine it is
San Marzano Edda Bianco Salento is an Apulian wine with a complex aromatic profile, the result of a blend that combines Chardonnay with Fiano and Moscatello Selvatico grapes. On the nose, it reveals floral scents, notes of citrus, peach, and delicate hints of vanilla. On the palate, it offers an enveloping sip, supported by solid acidity and a vibrant marine savouriness. The taste is fresh and dynamic, enriched by elegant toasted nuances that lead to a long and balanced finish, ideal for pairing with seafood risottos or white meats.
Where it comes from
This wine is produced in the heart of Salento. The vineyards grow at about one hundred metres above sea level, benefiting from a favourable maritime climate influenced by currents between the Ionian Sea and the Adriatic Sea. This exposure, combined with shallow soils of medium-fine texture, gives the grapes marked freshness and a clear mineral character. These environmental conditions are enhanced by San Marzano to offer an authentic and defined expression of this specific Apulian terroir.
How it is produced
The harvest takes place in the second decade of August. After destemming, the grapes undergo a brief cryo-maceration, followed by gentle pressing and static cold settling to preserve the finesse of the aromas. Alcoholic fermentation takes place entirely in French oak barrels. Subsequently, the wine undergoes lees ageing for four months in the same barrels, enriched by weekly bâtonnage. This process gives the wine texture and breadth of flavour, integrating soft toasted nuances that balance the natural liveliness of the sip.
History and Curiosities
The name Edda, which means “she” in the Salento dialect, embodies the feminine soul of the historic Cantine San Marzano, founded in 1962 in the province of Taranto. This outstanding white wine is born from vineyards caressed by the maritime climate between the Ionian and Adriatic seas, combining the company’s international vocation with a deep rural heritage. Highly acclaimed by critics and awarded prestigious honours such as the 4 Grappoli Bibenda, it represents the perfect balance between authentic Apulian tradition and oenological innovation, translating decades of experience into an unforgettable wine.
