The vine roots delve into a complex soil, where limestone, marl, clay, sand and granite alternate, giving the wine a distinct and unmistakable mineral character. Rolly Gassmann cultivates these lands following organic and sustainable practices, in full respect of the surrounding ecosystem and the vocation of the territory.
How it is produced
Production begins with a manual harvest of the grapes at perfect physiological ripeness. In the cellar, the grapes are gently pressed to preserve their natural aromatic qualities. Fermentation takes place in separate barrels for each individual vineyard, utilising the action of indigenous yeasts to maintain a defined organoleptic profile that is true to the characteristics of the vineyard. Once the fermentation process is complete, the wine rests for eleven months. The wine then undergoes a further prolonged maturation of about two years, which enhances its elegant and balanced character.

The winery is now run by Marie-Thérèse, Louis and their son Pierre Gassmann. The production is about 300,000 bottles per year, only 20% of which are destined for export outside France. The wines are powerful, precise, played on the difficult ridge of a vibrant acidity and balanced sweetness: Pinot Gris, Riesling and Gewurztraminer by Rolly-Gassmann give pure enjoyment especially to those who have the patience to wait for the legendary ability to evolve in the bottle.
