This Metodo Classico displays a straw yellow colour and a fine, persistent perlage. On the nose, it reveals notes of white fruit, citrus and elderflower, enriched by fragrant hints of bread crust. On the palate, it boasts a well-integrated mineral freshness with a delicate savouriness, offering a dry and dynamic sip. It proves to be an ideal accompaniment for aperitifs, raw fish, sushi and soft cheeses.
Where it comes from
This sparkling wine originates in Piedmont, among the hills of the Langhe, the chosen territory where Rocche dei Manzoni operates. The vineyards located in Monforte d’Alba are cultivated using sustainable farming practices aimed at preserving the ecosystem’s balance. The use of the Guyot training system ensures the harmonious development of the vines and the excellent quality of the grapes. This unique microclimate gives the glass a profile of great precision that faithfully expresses the territorial character, confirming the vocation of a region capable of excelling even in the complex production of sparkling wines.
How it is produced
The process strictly follows the timings of the Metodo Classico, with the second fermentation taking place directly in the bottle. The wine undergoes a slow maturation on the lees for a period ranging from thirty to thirty-six months, a crucial phase for enriching its aromatic profile and depth of flavour. Following the traditional steps of remuage and disgorgement, the sparkling wine requires a final ageing in the bottle of at least six months. This final rest allows every structural component to harmonise, perfecting the elegance of the perlage before tasting.

Working with the strength of his winemaking experience and his innate ability to stay ahead of the times, in 1976, Valentino created the first Langhe blended wine: Bricco Manzoni, a blend of Nebbiolo and Barbera grapes. But he decided to go even further and, a couple of years later, in 1978, he began producing sparkling wine using the traditional method and introduced the use of small oak barrels for the aging of red wines. Migliorini was the first to import the small oak barrels to the Langhe, and in a short time these numbered 300 units.
By 1982 the small oak barrels were used for all vinification and, in 1999, the first 10-year reserve Barolo was produced. Experimentation has marked the entire production of Rocche dei Manzoni and, together with attention to detail, it has led the winery to become a great interpreter of Piedmontese red wines and opened the way for the traditional method of sparkling wine production in the Langhe.
