What kind of wine is it

Fiano di Avellino Exultet by Quintodecimo is a still white wine made from Fiano grapes, an authentic expression of the Campania region. It stands out for its fresh profile, characterised by a dense and continuous structure. The bouquet offers clear varietal aromas with notes of linden, acacia and thyme. On the palate, the taste is enveloping, releasing aromas of exotic fruit and candied citrus that rest in balance on a subtle mineral texture. A glass that enhances the noble vocation of the grape variety, delivering a sip of great consistency and persistence.

Where does it come from

The wine originates from Lapio, in the province of Avellino, in an area of Campania with a long-standing tradition. The vineyards, cultivated using the Guyot training system, are located at an altitude of 570 metres. The south-west exposure ensures even ripening and a well-defined fruit expression. The roots delve into deep clay-limestone soils, a geological feature that gives a compact flavour profile and imparts that distinctive mineral component which pleasantly punctuates the drinking experience.

How is it produced

Production begins with a manual harvest carried out between the end of September and the beginning of October. Upon arrival at the winery, the bunches are carefully selected on sorting tables before undergoing gentle pressing and static decantation. The temperature-controlled fermentation takes place in steel vats and French oak barrels. The process concludes with a ten-month maturation in the same containers, a technical choice essential for integrating aromatic precision and maintaining a clean, elegant style.

It is a sort of raw material’s transfiguration that springs from must as a statue springs from stone. The man who creates it is the one who carves into this stone, already having the end result in his mind. To do this, obviously a man must have a sound scientific background. He must have an understanding of several things; knowledge of the soil, the physiology of the grape, the biochemical processes underlying the transformation of grapes into wine, and the mechanisms of sensory perception. These represent the essence of my way of making wine, this magical invention of man, which has affected my entire life.
