Description
What kind of wine it is
Quintodecimo Exultet is an elegant still white wine, an authentic expression of Fiano di Avellino. Made exclusively from Fiano grapes, it stands out for its dense structure and pronounced mineral character, supported by a vibrant freshness. On the nose, it offers a bouquet with clear notes of linden, acacia and thyme. On the palate, the creamy texture harmoniously blends with flavours of exotic fruit, candied citrus and hints of honey. The finish is long and marked by a pleasant savoury drive, making the wine ideal for enhancing fish-based dishes.
Where it comes from
This wine originates in Lapio, in the Avellino area, a region historically renowned for viticulture in Campania. The vineyards are situated at 570 metres above sea level with a south-west exposure, optimal conditions that favour the full ripening of the grapes while preserving their acidity. The clay-limestone soils give the flavour profile its typical verticality and a distinct chalky backbone. The use of Guyot training maintains a perfect balance between vegetation and production, ensuring excellent concentration. Strict organic cultivation enhances the natural expression of the terroir, resulting in the glass in a bright yellow colour with vivid green reflections.
How it is produced
The production process begins between the end of September and the beginning of October with a careful manual harvest. The bunches undergo rigorous selection, followed by gentle pressing and static decantation of the must. Fermentation takes place at a controlled temperature, divided between steel vats and French oak barrels. The wine then rests for ten months through a carefully managed ageing on fine lees, maintaining the division between steel and wood. This skilful contact enriches the body of the wine, ensuring volume, remarkable continuity on the palate and an olfactory precision capable of supporting a long evolution over time.
History and Curiosities
Born in Campania from the expertise of oenologist Luigi Moio, Quintodecimo Exultet is a refined organic Fiano di Avellino DOCG. The prized grapes, grown at an altitude of 570 metres on clay-limestone soils, are hand-harvested and carefully selected. A skilful fermentation in barrique and steel, followed by ten months of ageing, gives rise to a white wine with a dense and vibrant structure. The alluring aromas of linden, candied citrus and honey lead to a savoury finish, making it ideal for beautifully enhancing any fish-based dish.
