Sarpa Oro by Poli is an authentic Italian barrel-aged Grappa distilled from fermented Merlot and Cabernet grape pomace. Boasting a warm amber-yellow colour, this spirit offers a structured and enveloping profile shaped by careful maturation in wood. The nose reveals an intense, spicy bouquet, highlighting distinct notes of exotic fruit, candied lemon peel, cedar, and liquorice. On the palate, the liquid is soft and pronounced, culminating in a clear, lingering vanilla finish at 40% ABV, delivering a complex and nuanced tasting experience.
Where it comes from
This Grappa originates in Italy, specifically in the Veneto region within Schiavon near Bassano del Grappa. The raw materials are carefully sourced from local vineyards located between Marostica, Breganze, and Bassano—an area deeply rooted in viticulture. Poli places a strict emphasis on distilling exclusively fresh grape pomace, a technical decision that ensures clean and defined aromas from the outset. Following distillation, the spirit undergoes a natural maturation process within the distillery’s underground cellars. Here, the protected environment allows the spirit to gradually develop its depth and consistency over time.
How it is produced
Production relies on an artisanal approach, utilising small, steam-heated copper alembics operating on a discontinuous batch cycle. The fresh pomace is loaded into the boilers, with each batch carefully managed to extract the purest distillate. Once collected, the Grappa is transferred into 225-litre French oak barriques to age. This resting phase imparts its distinct amber hue and builds a complex flavour profile rich in fruit and spice. Best served at 16 to 18 °C, this barrel-aged spirit is a perfect after-dinner drink, crafted to be savoured slowly.
