Cleopatra Amarone Oro by Poli is an amber-gold Italian grappa crafted from the fresh pomace of Amarone della Valpolicella, distilled in a vacuum still and aged in French oak barrels. Bottled at 40% ABV, this spirit offers a smooth, well-structured palate complemented by delicate floral notes and a clean, deep, long-lasting finish. Its profile is characterised by intense aromas of ripe red grapes, alongside hints of almond and hazelnut. It is best enjoyed when served neat at 18–20°C, though it also serves as an elegant base for refined cocktails.
Geographical origin
Produced by Poli in the Veneto region, this spirit originates from the renowned Valpolicella winemaking area. The essence of the grappa lies in fresh pomace derived from Corvina, Rondinella, and Molinara grapes—the classic varieties used to create Amarone. Processing these grape skins while they remain rich in must ensures exceptional aromatic clarity and a pronounced fruity character. This careful selection creates an authentic spirit that reflects its terroir, offering a balanced palate with defined notes of mature red fruit and dried fruit.
Production process
Production follows an artisanal, discontinuous method using the Crysopea vacuum bain-marie still. Distilling at a low temperature prevents thermal stress on the raw materials, successfully retaining the most delicate primary aromas. The grappa then undergoes 12 months of maturation in small French oak barrels. This period of wood ageing softens the mouthfeel and integrates sweet spice notes of vanilla and cocoa, alongside nuances of lightly toasted wood. The resulting spirit achieves a harmonious balance between its fruity core and a gentle oak influence.

Established in 1898, Poli Distillerie dedicated this range to the alchemist Cleopatra, the inventor of the first still. The product is also named after the historical Crysopea still and is symbolically linked to the Ouroboros dragon.
