How it is produced
The process begins with the decanting of the must and continues with low-temperature fermentation in steel tanks. After malolactic fermentation, carried out separately for each grape variety, the base wines are combined in the final blend. The prise de mousse follows the strict criteria of the Traditional Method at a controlled temperature of nine degrees, ensuring perfect integration of carbon dioxide. The production process concludes with hand riddling, a traditional practice that enhances the wine’s visual and tactile finesse. This meticulous production defines its structure and freshness.
