How it is produced
After pressing, the must undergoes two decantations, the second of which takes place cold in steel tanks for twenty-four hours. Alcoholic fermentation proceeds slowly at a controlled temperature, keeping the batches separate according to grape variety and village of origin. Subsequently, the wine undergoes complete malolactic fermentation before blending. The prise de mousse in bottle takes place in deep underground cellars, where the long ageing on the lees imparts the typical creamy texture. The production cycle concludes with the traditional manual riddling and disgorgement, resulting in a persistent finish with clear citrus accents and pronounced mineral nuances.
