Description

What type of wine it is

Bianco Faye by Pojer e Sandri is a still white wine with an elegant and enveloping profile, originating from Trentino-Alto Adige. This structured blend of Chardonnay and Pinot Blanc fully expresses the character of the Vigneti delle Dolomiti. On the palate, it is dry, frank and direct, revealing a structure of considerable depth. The olfactory analysis offers a broad and clear bouquet, where aromas of vanilla, almond paste, hazelnut, hay and musk intertwine with a deep mineral nuance of flint, rounded off by oak maturation on the lees.

Where it comes from

The grapes destined for this wine are grown in the municipality of Faedo, on the slopes of the Cosleri, Pianezzi and Palai localities. The vineyards stretch across south and south-west facing slopes at an altitude between 300 and 700 metres, benefiting from the constant ventilation of the Ora del Garda wind. The soils, of silty-calcareous matrix and up to one metre deep, rest on a marly and volcanic substrate enriched by dolomitic stratifications. This precise geological and climatic combination gives the wine a distinct taste definition and a dry character.

How it is produced

Cultivation follows the open "pergoletta trentina" system, ensuring meticulous yield control. In the cellar, the process involves fermentation followed by maturation for approximately six months in small oak barrels, where the must rests on the lees, taking advantage of a particular "hourglass" effect. After a period in stainless steel and careful ageing, the wine takes on an intense straw-yellow colour with greenish highlights. Thanks to its significant structure, this white proves to be the ideal pairing with white meats and roast fish dishes.

Faedo, 1975. Two young people, two hectares, few resources, a few ideas, a lot of courage and a dream: to produce high-quality natural wine from the vineyards on the Faedo hill, between the Adige Valley and the Cembra Valley, which many say had little vocation for growing vines.

Faedo 1998: We are already starting to show our thirst for innovation: we are among the first at a national level to market Chardonnay, which until then was practically unknown.

Faedo 2002: We patent the reduction and press vinification with nitrogen recovery, which drastically reduces the use of sulphites. We then begin to wash the grapes through the grape jacuzzi.

The arrival of Marianna, Matteo, Fiamma, Elisa and Federico has brought further life and energy to this dream in which passion and innovation are the keystone.
