Description
What kind of wine it is
The Champagne Blanc de Blancs Extra Quality Brut from Ployez-Jacquemart fully expresses the elegance of Chardonnay. Crafted according to the principles of the Traditional Method, it stands out for its bright golden yellow colour and very fine perlage. The bouquet is enriched with delicate toasted notes that lead to a sip characterised by a creamy structure and great aromatic precision. Thanks to its harmonious finish, it is ideal as an aperitif and pairs beautifully with shellfish and flavourful cheeses.
Where it comes from
This Champagne is produced in France, from vineyards surrounding the commune of Ludes. For its creation, Ployez-Jacquemart selects grapes from outstanding villages such as Bisseuil, Cuis, Puisieulx, Taissy, Grauves and Vertus. The careful selection of these plots gives the wine extraordinary balance, enhancing the identity of the terroir. The maison, founded in 1930, has operated for three generations with the aim of showcasing the local soils and preserving the authentic character of the production area.
How it is produced
Production begins exclusively with pure cuvées, using only the first pressings. Reserve wines are almost never used in the blend. As required by the Traditional Method, the Champagne undergoes four years of ageing on the lees, a crucial period for developing the creaminess and texture of the bubbles. At disgorgement, the reduced dosage of cane sugar ensures a dry profile, delivering a clean and persistent finish on the palate.
