Description
What kind of wine it is
The Bourgogne Cote d’Or Chardonnay by Pierre Morey is a structured white wine that clearly expresses the character of its terroir. On the nose, it opens with distinct notes of pear and citrus, accompanied by hints of white flowers and almond. On the palate, it reveals Chardonnay in its authentic form, offering a dense and creamy texture supported by vibrant acidity. This balance results in an enveloping sip that culminates in a savoury and mineral finish, ideal for pairing with shellfish, lean fish or soft cheeses.
Where it comes from
The grapes come from the Burgundy region, from organically farmed vineyards located in the commune of Meursault. The vines, grown on deep clay-limestone soils, benefit from an ideal substrate that imparts tension and a distinctive chalky character to the wine. The nearly forty-year-old plants ensure a well-defined aromatic concentration. The proximity to the Meursault area gives these grapes a marked sense of place, enhancing the expressiveness of the surrounding environment.
How it is produced
The winemaking process aims to preserve the freshness and complexity of the fruit through measured choices. Fermentation takes place entirely in oak barrels, with limited use of new wood so as not to overpower the varietal’s identity. This is followed by a long period of ageing on the lees for about 18-24 months, during which regular bâtonnage enriches the wine’s structure. The partial malolactic fermentation, managed variably depending on the specific barrels, ensures an optimal balance between enveloping volume and lively acidity.
