This brut rosé Champagne from Pierre Mignon is crafted from a blend of Chardonnay, Pinot Meunier and Pinot Noir grapes and is produced using the Traditional Method. Where it comes from
The grapes come exclusively from the Clos des Graviers, a single enclosed vineyard located in Le Breuil, in the picturesque Marne Valley. This specific plot, with vines dating back to the 1950s, is characterised by a stony soil. The stones extracted from the ground have historically been used to build the typical dry-stone walls that mark the boundaries of the plot. This terroir gives the Champagne a distinct taste identity. The single-vineyard origin ensures a perfect balance between vibrancy and aromatic depth.
How it is produced
Vinification is carried out in full accordance with the Traditional Method, with particular attention paid to minimising clarification and filtration processes to preserve the integrity of the base wines. After the delicate prise de mousse, the long ageing on the lees lasts for almost ten years, enriching the organoleptic profile with elegant yeast notes and toasted hints that intensify with oxygenation. The brut dosage maintains a clear freshness, making the wine extremely versatile. It pairs well with lobster, smoked salmon, game birds, carpaccio and smoked tofu. Serve at 6-8 °C in large glasses.
