Where it comes from

The grapes grow in the north-western sector of the Côte de Beaune, in the surroundings of the picturesque village from which the Savigny-lès-Beaune appellation takes its name. This historic area of Burgundy guarantees optimal soil and climate conditions for viticulture. The soils have a specific composition of limestone and clay, an essential element for promoting clear aromatic profiles and a consistent texture on the palate, offering a sip that is fully representative of its place of origin.

How it is produced

Vinification takes place in stainless steel tanks at a controlled temperature for about three weeks, preceded by a cold pre-fermentation maceration. Techniques such as pumping over and punching down allow for optimal extraction of colour and structure during fermentation. After malolactic fermentation, maturation continues in oak barrels for a period ranging from eight to sixteen months. The measured use of a proportion of new barrels integrates soft toasted notes, defining the final taste balance of the wine.
