Description
What kind of wine it is
Sancerre Grande Cote by Pascal Cotat is an elegant still white wine from the Loire Valley, born from the pure expression of Sauvignon Blanc grapes. This label embodies the soul of the Sancerre appellation, standing out for its defined and profound aromatic profile. On the nose, it offers a distinct mineral imprint intertwined with fresh citrus notes of citron. On the palate, it reveals itself through a broad and savoury sip, capable of enveloping the mouth with a well-defined structure and prolonged persistence.
Where it comes from
The roots of this white wine lie in the renowned Loire Valley, more precisely in the terroir of Chavignol. This geographical area is a benchmark for the cultivation of Sauvignon Blanc, a grape variety that imparts a clear aromatic precision. Pascal Cotat manages a small domaine characterised by limited production, where deep respect for the ecosystem dictates the agricultural rhythms. Careful manual vineyard management ensures the utmost care for the vines, linking the wine's identity to its place of origin.
How it is produced
The agricultural process is completed in the cellar with the gentle pressing of hand-harvested bunches. Fermentation starts spontaneously thanks to the exclusive use of indigenous yeasts. The wine then matures in ancient oak barrels, with an average age of sixty years, enriching the flavour profile without overshadowing the varietal character. The decision to operate with no filtration whatsoever keeps the original substance intact, offering an intense and fleshy tasting experience.

The main vineyards of the domaine are both located on the terroir of Chavignol, east of Sancerre and cultivated with Sauvignon Blanc, a native vine of the northeastern region of the Loire, which reaches excellence in these places.
Pascal also owns a small piece of pinot noir that he uses to produce an interesting and almost unavailable rosè. The harvest as well as the entire management of the vineyard is manual and respect for the land is a way of life rather than a style of viticulture for this winery.
The vinification is carried out with soft pressing and with the aim of enhancing the expression of the territory, only indigenous yeasts are used for fermentation. The rest takes place in 600-liter oak barrels, with an average age of 60 years. No filtrations are performed. Read more
