Description
What kind of wine it is
Pascal Cotat Sancerre Blanc Les Monts Damnes is a still white wine that embodies the precision of Sauvignon Blanc. Distinguished by a bright straw yellow colour, it reveals delicate floral aromas on the nose, intertwined with notes of aromatic herbs. On the palate, it offers an intense and elegant sip, supported by a solid structure that allows it to evolve over five to ten years. It expresses its best qualities when served between 10 and 12 degrees, making it ideal paired with seafood risottos, white fish, grilled dishes and blue or mature cheeses.
Where it comes from
The wine originates in the Loire Valley, within the renowned Sancerre area. The grapes come from Chavignol, specifically the Les Monts Damnes cru, an outstanding wine-growing area that imparts a marked geographical identity. Pascal Cotat operates with limited production, following the principles of organic and sustainable agriculture, in full respect of natural rhythms. Manual harvesting and careful soil management enhance the potential of the grape variety, delivering a pure and consistent expression of its place of origin.
How it is produced
The production method aims for maximum expressive transparency, starting with gentle pressing to extract the must in a controlled manner. This is followed by fermentation with indigenous yeasts, which defines an authentic and non-standardised aromatic profile. The wine then undergoes maturation in oak barrels with an average age of around sixty years, historic vessels that support flavour stabilisation while preserving the integrity of the fruit. To maintain every nuance, vinification concludes with the strict choice of not filtering the wine before bottling.
History and Curiosities
The Pascal Cotat Sancerre Blanc Les Monts Damnés 2024 embodies the excellence of the Loire Valley. The result of organic farming and manual harvesting, this Sauvignon Blanc is produced in small, artisanal quantities in Chavignol. Fermentation with indigenous yeasts is followed by slow maturation in historic 600-litre oak barrels. Bottled without any filtration, it preserves its purity and elegance, expressing an authentic character capable of evolving beautifully for up to ten years.

The main vineyards of the domaine are both located on the terroir of Chavignol, east of Sancerre and cultivated with Sauvignon Blanc, a native vine of the northeastern region of the Loire, which reaches excellence in these places.
Pascal also owns a small piece of pinot noir that he uses to produce an interesting and almost unavailable rosè. The harvest as well as the entire management of the vineyard is manual and respect for the land is a way of life rather than a style of viticulture for this winery.
The vinification is carried out with soft pressing and with the aim of enhancing the expression of the territory, only indigenous yeasts are used for fermentation. The rest takes place in 600-liter oak barrels, with an average age of 60 years. No filtrations are performed. Read more
