Vermentino Stellato by Pala is a still white wine and dry, faithfully reflecting the character of Sardinia. Made from Vermentino grapes grown in the Isola dei Nuraghi area, it comes from old vines that give the glass remarkable intensity. The aromatic profile stands out for its persistent bouquet, where floral aromas and unmistakable notes of Mediterranean scrub emerge, perfectly integrated with fresh hints of apple, pear, citrus and summer fruits. On the palate, it offers a warm and full sip, making it an ideal companion for shellfish, seafood and first courses with delicate flavours.
Where it comes from
The grapes destined for this wine grow in the Sardinian localities of Tanca S’Arai and Benatzu Coloru, in the territory of Serdiana. The rows extend over medium hill slopes and are managed using the low espalier training system. The soil is sandy and clay-limestone, enriched by a significant presence of stones and rocky fragments. This particular soil composition translates into the glass as a pronounced mineral sensation and a highly defined aromatic profile, maintaining balanced yields and excellent fruit definition.
How it is produced
Work in the winery begins with a careful selection of Vermentino bunches, followed by gentle pressing. Alcoholic fermentation takes place in stainless steel tanks at a constant temperature of twelve degrees. At the end of the process, the wine rests on the fine lees for about three months, a crucial maturation to give the liquid a silky texture and a fine structural creaminess. During tasting, a remarkable balance emerges, guided by a juicy acidity and a savoury streak that prolongs the sip into a persistent finish with clear returns of yellow fruit.
