Where it comes from
This grape variety finds its ideal habitat in Novacella, Trentino Alto Adige, a mountainous area where the Huber family has tended their plots for several generations. The vines thrive at an altitude of between 650 and 900 metres, benefiting from a cool climate that encourages regular ripening and a clear aromatic development. The roots of the plants sink into permeable soils of morainic deposits, enriched with mica schist, paragneiss and quartzite. This unique geological composition ensures excellent drainage and gives the wine a pronounced precision of flavour and freshness, allowing the grapes to clearly reflect the characteristics of their place of origin.
How it is produced
The creation of this wine begins with meticulous manual harvesting of the Gewurztraminer grapes, grown using the Guyot system and kept at a controlled yield to maximise the concentration of aromas. In the winery, the transformation takes place through a slow fermentation at controlled temperature in stainless steel tanks, a technique aimed at preserving the varietal purity of the fruit. Afterwards, the wine undergoes maturation on fine lees in steel for about six months. This period of rest enriches the structure and volume of the wine, ensuring high sensory stability and maintaining the clean, essential profile that distinguishes the Pacher Hof style.
